Summary

The North Caucasus is a strategically significant part of the Russian Federation, a uniquely rich territory with both well-developed industry and agriculture. In accordance with the modernization plan of the North Caucasus federal district the North Caucasus federal university, one of the largest in Russia research centers, was created on the basis of the three largest higher education institutions of the Stavropol Krai. One of the leading schools of organic chemistry not only in the North Caucasus, but also in Russia was established at the university. In 20 years the school has obtained a huge massif of results in fundamental and applied research. It became one of the leaders in the field of organic and element organic chemistry. In the nearest future, its most important discoveries and achievements will form a development basis, naturally, taking into account regional tasks and world tendencies in the development of chemical science.

In the article physical and chemical properties of peat are considered, efficiency of its application in an oil and gas complex as a reagent for preparation of technological liquids for drilling and repair of wells for prevention of pollution of productive layers is shown. Creation of Food Products of Corrective Action

Summary

The recent research has shown that the organic compounds contained in cruciferous vegetables are capable of reducing risks of cancer, especially in the early stages. The use of Brassica rapa L and inulin containing raw materials of Scorzonera hispanica L. as ingredients for production of functional products of treatment and prophylactic action is considered in the article. The formulation of the functional product containing these ingredients is developed. Solid, fat, vitamin C, mineral substances, cellulose contents and total acidity have been determined by calculations and chemical methods. The introduction of the above mentioned ingredients to a product leads to a decrease in protein, fat, and starch contents; the contents of mono - and disaccharides, mineral substances, vitamins and cellulose increase. Caloric value decreases by 10,65%. , After completing pharmacological research in vivo on different types of activity, the functional product, fritters with turnip, can be used in dietary and treatment and prophylactic food for people predisposed to cancer.
